The order matters because each step produces the information the next one needs: a chosen project sets the shopping list, one trusted recipe creates a baseline, and the wait is what turns that baseline into something you can taste and score. Rating batch one before you change anything is what makes batch two an experiment instead of a guess.
Step 1: Choose one project, not three
Choosing a project first decides almost everything downstream: your shopping list, your equipment, and how long you'll be waiting. Sauerkraut and pickles are the same family of fermentation — vegetables, salt, a jar, a weight, one to four weeks. Kombucha is a different animal: it needs a live starter culture, sweetened tea, and a jar you won't need for anything else. If you have no starter, kraut is the faster start. If you want a drink you can bottle and share, kombucha earns its extra steps. Where people go wrong is starting two or three at once, or picking kombucha because it sounds more interesting and then spending week one waiting on a culture to arrive instead of fermenting anything at all.
Step 2: Weigh everything, improvise nothing
You've already committed to one project, so you only need to master one set of numbers. Choose a recipe that lists weights in grams rather than 'a handful', read it fully before you shop, and follow it without edits on this first run. For sauerkraut that usually means cabbage, salt weighed at about two percent of the cabbage weight, and a jar that keeps everything submerged. Weigh the salt instead of eyeballing it — salt steers which microbes take hold, not just flavour. The classic deviation is cutting the salt because it looks like too much, or swapping flaky salt for fine salt by volume; both change the brine and the outcome. Tape the recipe name, date, and room temperature to the jar so you have something to compare later.
Step 3: Let it sit, resist checking
Your recipe gave a range, and the range exists because fermentation speed depends on temperature, not on a timer. This is the stretch where nothing visible happens and people quit. Put the jar somewhere you'll walk past daily but won't be tempted to open constantly — a counter corner, not the back of a cupboard. Check it once a day for bubbles rising, brine level, and any film on the surface. A thin white film is usually harmless yeast; fuzzy, coloured, or hairy growth is not, and that jar goes out. In a cool room, kraut runs one to four weeks and kombucha seven to fourteen days. The most common way to ruin this stage is refrigeration at day three because 'nothing is happening', which stalls the culture and locks in a flat, half-sour flavour you'll then blame on the recipe.
Step 4: Score it, don't just judge it
Now batch one becomes your baseline. Taste in small spoonfuls every few days before you decide it's finished, and write down three numbers rather than a verdict: sourness, salt, and crunch, each out of five. 'Sour 3, salt 4, crunch 2' tells you precisely what to change next time; 'it's fine' tells you nothing. Taste the brine too, not just the solid, because the brine is where the salt level actually lives. If it's too salty, that's information rather than failure — you can rinse before eating and reduce salt next batch. Where this step gets skipped is the single taste at the end, followed by the whole jar going in the fridge with no notes, so batch two starts from memory and any improvement becomes guesswork. Two minutes with a pen here saves a repeat batch.
Step 5: One change, then hand it over
Change exactly one variable, and change only that. If batch one scored sour 3, salt 4, crunch 2, keep the salt identical and add texture — caraway seeds, grated carrot, or a bay leaf; for kombucha, swap the tea or steep ginger at the second ferment. Write the change and the date on the jar so a later batch can be traced back to it. Then hand a jar to someone and ask a specific question: 'is this too salty for you?' rather than 'what do you think?', which mostly returns politeness instead of information. Overcorrecting is the usual stumble — new recipe, new salt ratio, new temperature all at once — leaving you with a better jar and no idea which change caused it. One variable per batch is slow, and it is the only way your notes compound.
A note on your phone disappears the moment you dismiss it, leaving no trace it was ever there. A paper strip taped above the jar sits in your eyeline, visibly shrinking one cut at a time, until the last line comes off and there is something to eat.
